I start eating when I wake up and go till bedtime...eating probably every couple hours. I consider my diet to be "the basics" but remember that I do an extreme amount of relatively intense cardio as my primary training so I can eat 400-500g of carbs a day and still cut...but it's all "clean" carbs and fats. Here's a list of the major foods I stick with:
2% milk
ON prot powder
all kinds of fruits - bananas, apples, grapes, melon, oranges, peaches, strawberries...
Kashi Go Lean cereal
Carb Countdown yogurt
ANPB
flax oil
almonds, walnuts, and peanuts
raw oats
albacore tuna
Balance Trail Bars, U-turn bars, Detour bars
lowfat cottage cheese (a lot)
whole wheat bread
whole wheat pasta
brown rice
sweet potatos
steamed veggies - broccoli, green beans, brussel sprouts, asparagus...
chicken, steak, pork, salmon
baby spinach, olive oil, mushrooms, red onion, tomatos
diet soda
There's a lot more but the basic concept is that I rarely eat junk food (chips, cookies, candy), I rarely drink more than 2-3 light beers a week, I typically eat fast food once every 2-3 months. I give myself a day every week or so when I can have a few things like pizza, chineese, ice cream, or whatever sounds really good at the time but I typically keep it to a single day. I track my diet on FitDay.com which lets me estimate calories in/out and that is very important if you want to gain/lose weight...it's all about eating more or less than you need. You can look through my journal and see what I eat on a daily basis:
