Rest Intervals for 5x5

I just started using the 5x5 last week.
I've been resting 2 minutes inbetween sets because I'm impatient.

I started out light though, so these workouts weren't too challenging for me. I may up the rest time to 3 minutes once I get to the weight where I'm being challenged.

on the compound stuff, as much as you need, I tend to go 3-5 minutes on those then speed it up for the other stuff

This is what I do also. Make sure to rest enough on the 5x5 part so you get maximum effort as the weight gets heavier.
 
I superset close grip bench with standing barbell curls on arms day. Otherwise, I don't. And I rest as long as I need to get the 5x5, usually about 2 mins for the first few sets, then up to 3-4 for the last one or two. The accessory stuff I rest about 60-90 secs.

I do my split like chest/tri's so I'm afraid to superset anything in there because it will take away from bench.

You rest as long as you need to get the 5x5? Interesting...how is this working for you compared to the same time inbetween all 5 sets?

I think one of the main reasons I stay the same time between all sets is so that I have an accurate base to compare strength gains to. If I waited longer between the 4th and 5th set as opposed to the 1st and 2nd set, I wouldn't really know if I had gained strength, or was just more rested.

I tend to use the same amount of rest between sets, but I dont stress about if its too much, ie, my rest on squats is always 3 1/2 minutes between sets. that way when I add weight and hit my reps the next week, I know it was me and not because I simply rested longer

If I can keep adding weight I know I'm gaining strength :). When I say I rest as much as needed, I don't take it to extremes. I don't think I've ever rested more than 4 or 5 mins.
