Question about Carbohydrates??

I'm alittle confused about types of Cabohydrates. I understand the difference "simple" and "complex" (complex being what bodybuilders shoud eat.), but I read where they say to stay away from pastas and breads. I thought those were complex. Is it a question of portion size to stay away from those foods? Also, with my job, it is sometimes more convienent to have a sandwich for a meal. Is there any "type" or "brand" of breads you guys could suggest that would be O.K. to eat. Any other ideals for "good" carbs.
One more thing, if rice is a good carb, then is "minute rice" ok or not. I've heard its not. Why???

Complex carbs are unrefined... meaning that they are in a natural state. BROWN rice (not the quick cook kind), Yams, Red Potatos, Pinto Beans, Black beans, Lentils, Oatmeal (not sugar packet kind, but Old Fashioned).

Breads can be OK, but in general they are not a good source. If it is a WHOLE grain Rye or Wheat it is OK to eat , but for the most part bread is no good.

The difference between simple carbs and complex is that simple spikes the insulin to quickly and causes more fat storage. Complex carbs give more of an even insulin rise that allows the muscle to store more in the muscle as energy rather than fat.

I hope this helps.
