off season growin..

Is it imperative for one to gorge themselves in the off season to gain quality weight?
What would be the best way for someone to gain maximal amounts of muscle without getting fater, therefore staying at like 7-8% body fat throughout the winter?
Would it be best to eat a lot of calories but keep carbs low after a certain hour and eat a lot of essential fats instead? I am 210 at 5`8
 
Depends on your ultimate goal
If your goal is to be a mass monster you gotta eat huge quanitities of food to get there. I dont really recommend this approach for anyone except competitive bodybuilders.
I think the best way to gain lean muscle tissue is just to control your carbs. Keep the protien high, the fat sources healthy but only eat carbs @ breakfast, before, during and after your workouts. the rest of the day eat protien and veggies..do cardio 2-3 times a week in interval fashion and keep your rest periods during your workouts minimal.

I`m going to be using insulin too so heres my diet:

8am - 100g oats, banana, 50g whey, 15ml Udos Oil
9am- Workout
10am - 10-15iu insulin, 100g glucose, 60g whey, fat free bagel
11am - 100g glucose, 60g whey
2pm - 200g chicken, 100g rice,
5pm- 200g steak and vegetables, 15ml Udos
10pm- 40g peanut butter, 300g cottage cheese, apple, 10ml Udos


Calories 4000, Protein 315g, carbs 450g, fats 80g

How does this look for gaining size without adding body fat?
Anything you`d change. I want to gain maximal mass but dont wanna go over 10% bf again.
Will do CV three mornings a week at 30-40 mins

Add in HCA, Glutamine, Creatine to your 1st slin meal. That looks like you have humalin - get log if you can. With 100g oats i'd venture to guess you will only need about 50g glucose pwo but start with 100g and ramp downwards if need be.
