195lbs at 6'1"...doesn't sound like your carrying too much bodyfat, so i don't think it would be too hard for you to shred up, that'll just come from proper diet. I guess the first question that needs to be asked is...what is your body type? Ectomorph? If this is the case and you're actually looking to gain some more lean mass, you're gonna need to eat, eat, eat. At least 1 gram of protein per lb of body weight, and steadily increase. As far as training goes, get started with the basics and stay consistent. Find a training split that works for you. I personally have to go 4 on 3 off because of work and family. Most people like their rest days spread out...that's up to you.
