Has anyone had one before? For those of you that don't know it's a semi-boneless turkey stuffed with a boneless duck stuffed with a boneless chicken! DROOOOL! i can't wait to see how it tastes.
Ok...It says to take it out of the oven at 160 degrees, but then wont the residual heat dry it out? Should I take it out at 150 and cover it with foil for 30 minutes instead?
By letting it rest after cooking & not cutting it right away - that will seal in the juices. If you cut it right away, there goes all the juice = dry turkey (well overcooking will do it too)

No. Follow the directions exactly. Thing is, you have to remember the duck is going to be (naturally) greasier than turkey and that is going to give you the needed moisture to keep it from drying.
or go online to various recipes for turduken to see how others cook it.
