His last rocky movie had a scene with him and his old bastard friend in the meat processing plant where all his emotions start welling up and I thought that was some quality acting.

He just purposely steroetypes himself into action roles because that's what he's good at and that's what makes him money. Why not?

I will say that was soem brutal ass footage, BUT then again, wtf do you think would happen if you got shot close range with a 50 bmg or whatever that was.

Sure it's ultra violent. War and war wounds are gory. Movies generously dumb down what happens 99% of the time.
