How to Get chicken Crunchy W/O Deep Frying?

I cant remember where i'd read it, but wherever it was said that once you heat olive oil, it becomes hydrogenated, which obviously would be bad.
 
this works
roll chicken in seasoned flour then slightly beaten egg whites
then a mixture of panko (japanese breadcrumbs), cornmeal, parmesan cheese, and chopped nuts which you have put through the food processor so it becomes fine

season with granulated garlic, onion powder, fave herbs (italian blend works well)
then bake at 375 til brown and crispy

nothing will beat deepfried
even shallow frying in olive oil but this comes close

This sounds Really Really Good!
 
Obi - I was going to suggest Panko!

Or use crushed cornflakes or Bran flakes + spices....

those would work but there is the additional sugars in the cereal that panko does not have
