Grilling with butter.

If one were to soak some meat in a buttery mix, would the butter mostly slough off during cooking or is this myth my mother is telling me when she cooks bullshit?
 
Might want to ask Obiwan about this one. I would think it gets soaked into the meat. I know a couple restaurants that cook their steaks in a half stick of butter and it tastes incredible. No surprise there :)

Agreed. I'm sure there's marginally less, but it's still junk. Ask your mom why she bothers to add it if it all magically disappears during cooking. :p
 
Even acid based marinades, unless you Jaquard or physically tenderize and butch up the flesh, wont penetrate more than about a mm in 24 hours.

Does a Peter Lugers charred steak smothered in butter taste pretty good>? i suppose.

Question: why? flavor? some other perceived benefit?

Meat, as in great steak, needs very little other than love. I will dig up a post i once... 'saw'... on this topic.
