and more importantly what not to do

I supplied seafood to restaurants here in jax, I was the salesman, so I have familiarity with the biz, and good friends with lots of good chefs

I feel if you are not a chef you should not own a restaurant. Nothing pisses me off more then a owner trying to tell me how to cook something. when he don't know is ass from his elbow when it comes to cooking.

well i did not go to school to be a chef ...but it was a cajun restaurant and i grew up cooking the food and taught our employess to do it as well

i could make some cajun dishes u would love

I have bin collecting recipes since I was 9 years old bro. All I ask of people now when giving me recipes is give me your personal bests. Take your time and right it out just like a recipe card and hook me up. So yes send me your best and I will print them out and add them to my books.
