Kim Chi

Napa cabbage - approximately one pound
4 cups of cold water
3-6 tablespoons of sea salt
1 tablespoon of fresh garlic, finely chopped
1 tablespoon of fresh ginger, finely chopped
1 tablespoon of fresh green onions (scallions), finely chopped
1 teaspoon of dried red chili pepper flakes (more if you like things spicy, less if you don't)
1 cup white balsamic vinger
1 1/2 to 2 teaspoons of stevia
Directions:

Cut cabbage into quarters dunk in cold water then salt leaves put cabbage in the fridge over night.

The next day, pour off water and thoroughly rinse cabbage leaves. You can shake them gently in the sink to remove excess moisture.

Place cabbage leaves back into large bowl and add garlic, green onion or scallions, ginger, dried red chili flakes, stevia, and cup white balsamic vinger. Use your hands to rub seasoning evenly into all cabbage leaves. Be sure to use gloves to do this, otherwise, your hands will burn from the chili flakes. If you are pressed for time, mix seasoning ingredients with about a cup of warm water before adding them to cabbage to allow for easier distribution on cabbage leaves. Use a knife and cutting board to cut cabbage leaves into 2 inch pieces before serving.

Aren't you supposed to bury it in the garden for a fortnight?

I started making it on Sunday ... Didn't eat any tell today. I had about 3 cups and I would say about 9-12 cups exited me. The the recipe should come with a warning. At least I know what to do next time I feel backed up.
 
kim chi fukin rocks! I can eat a pound of that stuff no prob. Never had it blow the colon out though. Now hemp proteins a different story......so is lentils spiced with cayenne pepper.

seriously though my girlfriend is doing this Pauline Nordin diet Program that consists of eat several lbs of veggies a day, Every night she eats abut 16 oz cabbage with shiritaki noodles, mushrooms, bell peppers, etc.

Most nights I do the same thing. Ive noticed a real change in my physique from adding in a large quanitity of vegetables..less bloat, better digestion and nutrient absorption, tighter waistline, etc

And my gf is down to about 14% bf @ 5'2 108 lbs. Down from 19% just 2 months ago.Pretty neat stuff
