FAT-FREE BANANA CREAM CHEESECAKE...the REVOLUTION!

I wonder, could this be made with instant pudding mix, using slightly less skim milk than recipe calls for and use the remainder of ingredients, then just refrigerate, since there are no eggs to be cooked as in cheesecake? Could just bake the crust to make it crispy then fill with the pudding mixture. Hmm, got me curious. I'll give it a try and post my results later.
 
This sounds great!

If it turns out too watery, maybe a scoop or three of instantized vanilla whey protein power would thicken it up very nicely! Then you can say it a high protein snack too! I am gonna try this this weekend. Thanks for the recipe!
