Exercise

How many exercises to a muscle group should be done. 2 or 3 perhaps?

Depends on your goals, how long you have been lifting, and a couple of other things.

Even if you aren't interested in this particular program, this is worth a read as the information is quite useful.

Personally 2 seems to be the most effective. I am too spent by the time I would get to a 3rd. I also keep my workouts to a 75 minute workout at the max so a 3rd would be near impossible to train it properly.
More is not better.
 
one can be effective for a more established lifter. Of course it will depend on a lot of factors. I think you need to find what works best for you and keep reading and learning. Find something that works (like the 5x5 for example) and keep doing it until it stops working. Then try something else.
