When you spike up your insulin, first off your body is going to switch off its "fat mobilizing" mode. Also, by spiking insulin with high GI carbs lets say, at 8pm, before bed, your muscles aren't too hungry for more glycogen storage(depending on activity that day), and when that insulin is released from the pancreas, it is a storage/anabolic hormone, and if there is no more room left for storing it as glycogen in the liver or muscle, then it stores it as adipose tissue.
