Fair enough my friend. I guess I have been lucky that even with double sessions, HIIT in the morning and heavy lifts in the afternoon, I have been on significantly reduced calories for periods and not lost mass on the meat and veggies, handful of BCAAs everytime I am in the kitchen, EFAs, and my normal HRT.
Im not a AAS guru so cant comment there for certain, but imagine from what I gather on here folks will bump Test, or do stuff like Primo, Mast, or Var while cutting calories and it helps retain muscle.
100g a day isnt much. if its working for you rock it brother! Everyones tolerance to carbs and their insulin response is different. I think some suggest cutting carbs out totally or just veggies, then slowly adding stuff in until you realize its not keeping you lean as you want, then you know at what point you need to keep carbs under to keep lean or drop chub.
I actually take carbs at times even if Im strict meat and veggies, say a light carb sports drink with whey protein in it, and a handful of BCAAs, beta alanine, and creatine during a training session, then after a big protein shake and resume meat and veggies diet.
I think everyone is different and there is no set protocol cookie cutter for all of us to follow...surely folks have been getting lean and ripped while using wheat products, yams and potatoes, and rice for years!

I agree there are a lot of individual tolerance issues. That being said how many times a day do we see someone post they have a clean diet (eat whole grains, dairy rice etc) and simply cant cut.
Couple things to consider. Grains = gluten and for a large portion of the population gluten = problems. Next, you have the insulin factor your mentioned, lots of folks bodies over react to large carb loads. Lastly, just think how grain is stored, what comes running out of a silo when there is a grain fire? Bugs and rodents! Pissing and shitting all over the food you eat.
As power said 100g isnt a lot and if your cutting is working, likely no need to fix it BUT cutting out grains, even if you dont think there is a problem will likely speed your progress.
I've not cut very often because I've mostly been a powerlifter in the higher weight classes, so not worried about it. That being said...when I have been trying to lose fat, cutting dairy has always helped me in a very big way (and I LOVE milk)...dropping grains/starches/sugars is easy for me, but giving up milk (which is full of carbs unfortunately) has always been very difficul for me. I do tend to have seasonal allergies, and giving up grains (and gluten) and dairy also helped that a lot as well....though not enough for me to give up milk full time, only when i need to shrink my belleh.
Milk is a lot like grains in the sense that many folks have lactose issues, just like many folks have gluten issues. There are tons of articles on the net that cover the issues caused by both and why avoiding them is beneficial. The fact that giving up grains/dairy has a direct impact on your seasonal allergies tells me one or both are at least somewhat problematic for you.
People always question me like I am crazy when I say give up grains/dairy to lose fat so thanks for sharing your personal experience, it just adds some more credibility to what I have been saying.
