Christmas menu time

Need to finalize some stuff, but the menus are pretty much set... going pretty swank this year, we do on traditional dinner on the eve then I get to wig out on the day...

Frissee with Langoustines and Clementines

Rissotto with Foie Gras and Cabbage

Hallibut wrapped in Proscuitto and Sage

Roast Reindeer Saddle with Bourbon-Raisin Ratatouille
Roast Black Truffle Turkey

Potato Leek Gratin with Garlic Confit

Grilled Asparagus with Shallot Crisps



Need to dig out wines, but I'm pretty sure whats what, just need to find the right bubbles...


What do you folks do for Holiday dinners? If you have a local tradition, i would love to hear it. Learning what families do for each other makes ya rich.

Already have a place for you, girl, you know that.


I have a Petit Syrah, just the right age too. Its the same grape, just from a different country, as Shiraz... its a bit more complex.. I think you'll dig it, its a bit of a risk, but no worries.

damn , and i felt all classy with my "jug of wine" from the corner store. ...shit mang, thats 4 bottles in one little jug, cant go wrong.

I do that assparagrass that way, thin slice the shallots and make MOUNTAIN of them, fry em crisssspaaaay.

Works like a charm, just a tiny bit more uptown.

buffet on newyears eve.. Cheese crackers, dip, lil smokies finger foods etc..

damn, your menu sounds better than mine... turkey, sausage stuffing, jack daniels sweet potatos, roasted white potatos, stuffed mushrooms, cranberry sauce.
pies and icecream for dessert.

do you cavity stuff? The hot then cold, then hot again with a stuffed cavity can be dangerous...
