I'm a new lifter and I'm 20 years old and I want to start weight training and be consistent at it. I used to weight train years ago but went away from it so I consider myself new
should I start off with full body exercises or should I start off with Split routines. Do you think I should do 3 Day 4 day or 5 day

I suggest you go with 5 days routine and do at least 1 day full body and cardio

Do what you did before. It'll still work

You are young, so now is the time to grow and improve maximum. 5-6 days per week is needed, but remember to give your best in the gym, if you want real results and be the best at it.
