I have been reading alot of cons on beef jerky.
Here is a way to make jerky that I think you will like and also agree that the sodium intake will be low.
First you will need a outdoor grill, the kind that uses charcol. A gas or propane grill will not work.
Load up the grill with charcol and let it burn for about 1-1/2hr. Then go ahead and cook up some burgers or some form of lean steak. After you are done raise the grate as much as possible. Open all of the vents. Take a large top sirloin or strip steak and slice it into big pieces. Lay these pieces on the raised grill and let it sit overnight. When you come out the next morning you will have 100% real jerky. No added salt or flavor. Trust me when I tell you that you will not need any either. You can also add pepper before you lay the meat on the grill.
You can also paint the meat with A-1 or after the meat is done dip the meat in a pineapple glaze and then bake the strips in the oven until the glaze carmelizes. The glaze can be made using fresh pineapple and turbinado sugar. Cook it together until you have a jelly type consistensy.
