Aromatase inhibitors (do not confuse them with estragen antagonists such as nolvadex) do slightly reduce igf-1 production, but they do elevate blood serum testosterone levels, so there is a trade off. They really do not inhibit gains as much as one might think, other than the fact that many mistake water retention with true gains. Even if they do reduce gains slightly through a lower igf-1 production, one would not need to increase doses that much to elevate igf-1 levels to what they would be without the aromatase inhibitors. A 10% increase in dose should do it.
I think a large part of the reason is that bodybuilders in that era had a better work ethic. They trained very hard, and very frequintly, as one should do while on large doses of steroids. Do you honestly think you are going to overtrain on 1000+ mg of test a week by training a body part more frequintly, if you are resting enough and your nutrition is adequit? Arnold always trained a body part 3 times a week, and it hardly looks to me like he was "over training" or lossing muscle mass due it when he was winning the various Mr. Olympia's. Even now, when you stop reading flex magazine, and get their real info, most of the larger pro's are not doing once a week workouts for each body part. Studies on atheletes have shown that infrequint training methods such as that lead to detraining, and will not yield optimal gains. Depending on the individual, 3-5 times a week, seems to yield the best gains in performance and growth. No matter how you cut it, infrequint training is lazy, no matter how hard you think you are working out in those training sessions. This is especially true when you are using heafy doses of drugs that speed up the recovery process. The reason this works at all for some bodybuilders is because the drugs reduce the detraining effect they normally would be experiencing with an entire week of letting a muscle rest, which is quit pronounced in natural atheletes according to research.
