Sea Bass

sea bass?
do you mean chilean sea bass? aka patagonian toothfish
if so i love it too but it is on the endangered list
which explains the price
 
We call it Rockfish 'round these parts..... I only eat it out, when it's on the menu or special list.... Tilapia is more affordable....
 
rockfish? i believe that is what is known are pacific red snapper and yes tilapia would be a good substitute
chilean sea bass is much different
pure white flesh thick fillets great mouth feel
endangered as i mentioned usually about 15$ a pound wholesale
i no longer carry it on my menus
have gone to striped bass

Here in DE, Rockfish = Sea Bass..... I have no idea why....

Until recently, you couldn't even get it....

in the east rockfish is also known as striped bass

the sea bass referred to in most restaurants is:

which is number 10 on the list of fishes to avoid when on menus

most restaurants will designate what it is when refering to bass

the reason striped bass is now difficult to get is because it is the "in" fish for chefs

too bad chilean sea bass is endangered it is so wonderful
 
Chilean Sea Bass is the best-tasting fish i've eaten.. though its kinda expensive where i am and can't even get it year round

i thoroughly agree on all accounts
it's actually on the endangered list due to overfishing
sadly
