I eat the same things I eat when i am not taking insulin. I know a lot of people advocate simple carbs after a shot of insulin followed by complex carbs a few hours later but I no longer do that. I take my insulin before my meal and I eat like I always eat. High protien with moderate carbs equaling 10 grams per iu of insulin I use. I then stay on a eating schedule of every 2 1/2 hours. I have never had a problem using this approach and I have never gotten fat or bloated from insulin while eating like this. I used to do the tradition simple carbs followed by complex but a very good trainer that I respect told me that I would be better off just eating normally, just making sure I take in enough carbs and I believe he is right on the money.
If you are dieting and using insulin, which is very helpful in stopping muscle breakdown during dieting, then you really can't afford 100 grams of sugar anyway.
