Weight training everyday

Say I'm in the gym an hour to 1:15 every day. Am I breaking down muscle? Is this counterproductive. Doing different muscle groups each day.
Chest Tri
Back Bi
Shoulders Legs
Repeat
Are off days really necessary if I get in enough protein, calories, and sleep 7-9 hours a night?
 
Rest = grow
 
How many rest day should I schedule a week? Could I do
M-chest tri
T-back bi
W-shoulders legs
Th- chest tri
Fr- back bi
Sat- shoulders legs
Sun-rest
Or 3 on 1 off
 
2-3 on, 1 off

Every 2-3 months take 10 days-2 weeks off
 
Pro athletes?

No argument.

They don't do a bodybuilding workout every day as described in the 1st post of this thread.
