Veal Cutlets...How should i cookem? Chef?!? lol

I dont wanna bread them. Whats a healthy alternative?

I have a nice package of veal i bought today.

Chef where you at? Anyone.
 
u witty muvga, asking "chef" for cooking advice...who does that?
 
I am not really a chef, i just play one on TV.

first, whaddya got?

yes or no:

canned stewed tomatoes
fresh tomatoe, roma, i hope
great GREAT virgin olive oil
fresh garlic
red chilis fresh or dried flakes
corriandre seeds
fresh parsley, italian of course, is there any other kind? really...
good salt
cracked black pepper
a big fat sexy lemon

i got too hungry man. the entire time while cookin them i was like "did i do something to the big smoove that he wouldnt help a decent bor like myself out?"

sorry i didnt wait up.

I took the cutlets. Made a spice blend which consisted of:

Ms Dash Extra Spicey
Garlic Powder
Salt
Red Pepper (Dunkey like spicey)

Seasoned the cutlets up on both sides.

Heated up a lil Olio di olive (esstra vergine) in a pan. A little guiltless cooking spray as well.

Seared them fuckers lovely. made a good pound. laid them all out on tray. put some leftover homemade tomato sauce on top and some grated fresh mozzarella. Not too much. Broiled half those fuckers and went to tizzown.

THe other half of a pound will be tomorrows lunch (who am i kidding ill be snacking on them on the way to work )

lol! they don't get treated THAT bad, they have to stand in a little crate, but they get force fed all the milk they want and then some. They don't live long enough to know they got a raw deal.

look, you can throw morality issues at each other all day, the defining factor about preventing that kind of shit is easy: milk fed veal TASTES LIKE SHIT!

Its like taking great, free range, grass fed veal and BLEACHING ALL THATS GOOD out of it... like eating moistened cardboard thats 30 bucks a lb... nuts i say NUTS!

LOL @ BBill ASPCA poster child .. As an ex butcher I can tell you they get treated better than any other livestock prior to being slaughtered. Chickens are the worst.

My Mom used to brown and then cook pork chops and veal chops in an
electric fry pan on the counter with lid all day in a tomato sauce.

My dad used to raise some veal, and i am going to suggest that what you MEAN is that get more attention and more hands on labor... treated 'better'.. um.. nahhhh... but really, we cant ask them can we!?

I know what you mean Y, and yes, its not the veal feed lot/fattening procedures from the 60s and 70s anymore by a long shot...


OH! and YESSSS! my mom used to do that electric skillet thang with some marsala and mushrroms on veal chops.. whoa.. mouth watering even as we speak...
