The best diet to keep STRENGTH while burning fat.

I am 5'5" 185-189lbs(lots of fluctuation) and 12-15% BF. I need help designing my diet to help me keep strength and lose BF. My strength is very important to me because of my occupation, Im a police officer and I need to be as strong as possible because Im constantly wrestling around with little thugs in this damn place. Since Im so short and and dont weigh a whole lot my strength is what has helped keep me from getting my ass whipped lol. What do you guys recomend as far as a good diet to keep me from just flushing all of my hard earned strength down the tubes??? I always get at least 1gram of protein per pound of bodyweight 7 days a week. I split it up over about 6 meals per day. My fat intake is about 30-40grams per day mostly from eggs,beef,and whatever is left over from chicken,tuna,and the carbs I eat. I eat mostly complex carbs but tend to over endulge(SP?) some of the time. I am an ex-powerlifter so I know how to diet for staying at a certain weight but as far as burning fat slowly I dont know. I dont want to do it fast, I want to do it gradually. Basically I just want to get down to about 8%BF or so and keep my strength. I dont use steroids obviously because of my job so what do you guys think? Strength is my main concern. I want to be at about 8%BF or so by lets say around June when I go on vacation. Any ideas????

I cant seem to find all of the info I need. All I found out was that my metabolic index was like 21.25 or something from that scale on a website about it. I really dont know what that means other than its a way to measure your weight loss. Im just now sure on how to know how much protein, carbs, and fat to take in everyday. How gradual does this work and how much strength will I maintain???
