it is true that britian and France declared war on germany over the sovereignity of Poland. which was also attacked by the USSR.
yet Britian/France didn't declare war on the USSR
Poland didn't regain her soveriegnity until 1989 or so
Hitler's goal was to expand to the east and tackle Stalin's bolshevist/communist USSR.
when Britian and France entered the fray he was forced to turn west and remove France,after which he hoped Britian would sue for peace. This is speculated as one of the reasons he basically allowed the BEF to escape at dunkirk.
If Germany hadn't invaded the USSR Stalin would have eventually invaded Germany. The war in europe was fought on the eastern front. A clash of titan's unmatched in history and likely to never be eclipsed either.
I've spent over 30 years of my life studying that conflict.
