Squat and Leg Ext...

Squats hit a ton more and are a fully body exercise. However, assuming they both only worked the quads, you are right. Why do both? Considering the squat is 100x more effective and if done properly doesn't place as much sheer on the knee, dropping the leg extension is an excellent idea unless there is a compelling reason (imbalance/rehab) to keep it..
 
It's the done properly part that's the problem. There's a good sticky on the squat that you should have a read through. You should also try not to find yourself doing Smith machine squats if you can get any choice in the matter but I'd still prefer them over leg extensions.

With regards to the leg extensions: they can be handy to get a pump into the quads while you are sitting around chatting and having a ciggie and a cup of coffee. Otherwise, you're probably better off doing some light squats for high reps. I sometimes used to superset the two just to get a burn (not from the coffee).
 
Leg extensions tear up the knee too much. Squats are a natural physiological movement, with better overall results.
 
do leg extensions for 3 months then squats for 3 months and see how your quads look... then get back to us. ;)
