It would be nice if we had the ability to choose the number of bets that a user can place on an event. Also the ability to change odds to reduce pile-ons and to set total bet amount limits to prevent going in the red.

Changing odds/lines is the big one. A real-world bookie would laugh his ass off if you asked him to take bets without the ability to change the spread, but that's the only option for bookies here.
