Each workout of mine changes *considerably* (this goes for weights and cardio). I always vary sets, weights, exercises, rest periods and order of exercises. I never, ever let my body know what is coming next. I usually train to almost failure (don't hit true failure bec. I train alone), each set is 8-12 reps. But if I had to put a specific number, ON AVERAGE, this is what I typically do:
Chest - 2 exercises, 3 sets each (6 total)
Shoulders - 2-3 exercises, 3 sets each (6-9 sets total)
Back - 2-3 exercises, 3 sets each (6-9 sets total)
Bic - 1-2 exercises, 3 sets each (3-6 sets total)
Triceps - 2 exercises, 3 sets each (6 sets total)
Legs - varies WAY too much to give estimate
Timewise, I usually would train:
Ch/Sh/Tri - in 30-40 min
Ba/Bi - 20-30 min
Legs - 30 min
Again, I'll say this is NOT set in stone. I base my training on what I am "feeling", not some obscure pre-set number. I have a number I aim for, but if I feel stronger/weaker, I alter it. I never go into an exercise saying "I am going to only to 10 reps." I listen to my body and push myself harder or be more gentle based on what my body is able to give me that day.
I intentionally change the order and actual exercises though. I do not want to do the same things every workout. So I purposely alternate and rearrange things.
This works well for me - both result-wise and aleviates possible boredom.
