Protein pancakes and cooking

Everytime I make protein pancakes the pan seems to burn - and they are too flat - any suggestions on making them fat and not burning the pan.
 
Here's how I make my protein pancakes and they turn out delicous. It makes one big pancake

ingredients:
1c oats
1.25c egg beaters
1/2c NF cottage cheese
6 splenda
few sprinkles cinamin

Blend everything together in a a blender or food processor. Porr into a 12" pan coated with Pam and set the heat and medium-low. Put a lid on the pan and cook for approx 8 minutes or untill the top of the pancake sets. Flip the pancake and cook the other side a couple minutes without the lid.

When its done, sprinkle 6 more splenda on top, along with some cinamin. Tast like cinamin powdered sugar.

These pancakes are soo friggin good, been making them for a while now, almost everyday. Bout 55g protein, 60g carbs, 6g fat.
 
if you want to add some bisquik mix it makes them really thick and taste but adds about 6 grams of fat per 1/3 cup
 
If you want them to rise add in some Baking powder.

From trial and error, the best recipe/ratios i have come up w/ is: 5egg whites, 1/2 cups oats, 1/4 cup of ff cottage cheese and 1/4 cup of skim milk or skim buttermilk. Throw is some sweetener and 1 tsp of baking powder and blend on low until mixed. Let the batter sit for about 5mins and cook'em like reg. pancakes.
