Why is it that when I turn on the hot water faucet and wait for the water to get hot, I can always tell when it's finally running hot just from the sound?

Never noticed-gotta go try this......

Works in the kitchen, not in the tub. But I don't know know why, just curious if it really worked....

any hot water faucet or just the ones in your home?

I ask because it may be that you know how long it takes for the water to get hot since its something you do everyday. so even though you think its associated with
the sound of the water, it may really be that you are subconsciously timing it.

or it may be that you do have a gift :-)

Any faucet. I don't have it timed here, because it's not always the same. The pitch of the sound of the flowing water changes.

the density of the water changes

^^^Correct. The heat changes the pressure and density of the water and you can hear it through the pipes as it's coming up and out.
