From Sassy's "30 Minute Chef" cookbook...
I buy chicken breasts and top round steak in bulk, freeze it, use what I need. Marinade with those 30 min marinades in a bottle (look for low salt, low junk ones), slap it all on the grill for about 30 min, and there you have meals for a couple of days. Just mix up a bag of fresh vegetables and pull out what you need for each meal. Keep some brown rice and sweet potatoes around to eat with the different meals.
Hard to reheat fish, so a nice orange roughy or flounder filet or fresh tuna goes well with some fresh lemon and paprika on the grill for a fresh meal.
Another option is 99% lean ground turkey, sauteed w/ some onions for Mexican style stuff. Throw on some soy cheese (or real cheese - the non fat stuff melts and tastes like plastic) and vegetables for a good meal. Good meal for beans and brown rice too.
