ask for directions is Cheffy Smoove... and not once but THREE times. For a while I was sure I was hallucinating... ;)

Had a great weekend... good beer, good wine, great foods, and stunning company! Ate my first med rare steak and I have to agree with Chef... WOW that was the best steak I've ever tasted. Also ate Duck Liver.. don't remember what its actually called and well of course he tells me what it is AFTER I've began to chow down on it and admit that its pretty damn good... LOL!

Still didn't get him to cook for me..... :verygood: Guess I'll have to break out the Whites pretty soon. ;)

EACH!!?? No, it was for two... but even then it was a very big big portion. We took near half of it home.

You would both LOVE this place, its decorated in red flocked velvett and deep walnut panneling, its all done in 1920s burlesque sepiatone nudes and small flat pannel monitors with nudes from the 20s and thirties, VERY risque and very speakeasy... service was Outstanding, somelier was very helpful on some new wine choices, and the list of ports was great.


All in all I give the restaurant 3-3 1/2 stars for over all, and 4 for food. The company was beyond measure.

Ok, here is a quicky.

Double cut chop "larded" with raw garlic and sea salt, then grilled, served on a pile of wood grilled grannysmith apples, melted maui onions and maple glazed cubes of 'green' bacon and toasted Pecans.

Try taking the edge off some of the sweetness with a salty Verjus (non-fermented juice from unripe green grapes, has a killer VERY tart acidy flavor, like vinegar but MUCH MUCH better for this, as it doesnt fight the other flavors)
 
Seems that whenever the chef shows up, there is a good steak on the menu.

larding means, simply put, poking holes in the meat and stuffing things in it...

er.. that didnt sound right...


A very lage boar needle is stuffed with garlic and sea salt, pushed through the meat and as it is removed the garlic and salt stay behind.

brotham, any good kitchen supply store will hook with a larding needle set for cheap. Just use with care, it will go through you hand on the other side... for real.

ask if you need pointers.... er.. sorry. LOL.
