I found a recipe, which i have altered a bit to make it more healthy (it was already really healthy before i modified it). The recipe was for oatmeal cookies, but they come out more like cakes than cookies.
Don't know if you have ever heard of them, but apparently they are 'rock cakes'.
Recipe
1 cup plain flour
1/2 tsp. baking powder
1/2 tsp. ground cinnamon
1/2 cup firmly packed light brown sugar
1 1/2 cup oatmeal
1 egg, beaten
2 tbsp. water
1 tsp. vanilla
1 cup desiccated coconut The flavouring i used
The desired amount of protein (i used 200g)
Directions
In a medium-size bowl, combine flour, baking powder, cinnamon and protein.
Add sugar, stir in oatmeal. Add flavouring here too
Make a well in the center
Add egg, water, vanilla.
Stir (with hands makes it easier) vigorously until dry ingredients are moistened. [add more water if needed]
Drop by tablespoons 1 inch apart onto an ungreased cookie sheet.
Bake in a preheated 350 degree oven for 13 to 15 minutes or until done.
This mix should make around 10 cakes.
Note
The protein might make the cakes rise slightly more than usual.
I'll post the nutritional info later, and a picture of what my cakes looked like.
