Lots of people on here are partial to the 5x5 routine, it comes highly recommended from almost anyone who has given it a chance.
For your goals, I would recommend against doing a 5 day split, 5 days is probably the worst for trying to put on mass and weight. Three days is perfect for most, as it will give you enough rest to fully recover, and you won't burn as many calories on a higher day split.
Also, most 5 day splits are working 1 or 2 body parts per day, it's very hard to build muscle on these because it's so hard to progress doing a body part only 1 time a week. Also, it's not essential to rest a body part for a full 7 days to recover, most are recovered within 48 hours and ready to be trained again. Not to mention in order to build muscle, you must be progressing on your lifts each week, you'll probably be doing too many exercises on a 5 day split to really push them all forward.
