I actually tried something for the first time that adds a welcome twist to chicken breasts. To creat a kind of "fried crust," get some raw nuts, mash them into bits, lightly coat a chicken breast with some Egg Beater, them coat the breast with some of the ground nuts and bake it on a rack in the oven. Add salt and pepper to taste and you are good to go. Its really pretty tasty.
 
Thanks, its not bad. I used to do that with oatmeal too, but this tastes richer. I read another of your posts about vinegar lowering an insulin response. I'd never heard that before.

but don't bake it too much/too high temperature: it is not good fo the omega 3s (from the nuts)
 
Actually, alot of people will pan fry this kind of dish in oil, but that's not very health conscious. Baking at 350 isn't that bad. You don't want to cook it too slow or the meat will dry out. If you are that worried, you can always pound out the breast to make it thinner and have it cook faster. That's actually a decent idea. I might try that tomorrow.
 
I actually like pistacios best, but you can use anything. If you use Almonds, you might need a food processor to break them up, though.
