Last night I made a filet of sole marinated in olive oil, garlic, tarragon, rosemary, and pepper; and pan fried it with some butter, then threw in about a cup of spinach.
Dana Carpender's 500 low carb recipes and her 15 minute low carb recipe books are awesome books-- full of suggestions on how to jazz up low carb meals (and the dishes are quite low in carbs unlike a lot of other "low carb" books I've paged through).
