Ketosis Friendly Cookies (Recipe)

Here's my Keto twist to Christmas Old-Fashioned Walnut Balls:

2 sticks margarine
2 1/3 cups Sweetner (I use Equal, tastes like regular sugar)
1 teaspoon vanilla
2 cups Soy flour
1/2 teaspoon salt
2 cups finely chopped walnuts

Cream butter, sugar, and vanilla until fluffy. Sift flour and salt together; add to creamed mixture. Mix well; stir in walnuts.

Shape dough into walnut-sized balls (about one tablespoon of dough). Bake on ungreased cookie sheet at 375 degrees for 12 to 15 minutes. Remove from cookie sheet with spatula. When still warm but cool enough to handle, roll in powdered sugar.

Makes about 4 dozen, make sure to take only one tablespoon of dough for each cookie, otherwise the calories will get all screwed up.

Calories per cookies: 83
Fat: 8 g
Protein : 2g
Carbs: 2g

The only Keto downfall: don't reach for the milk. :p
