I've often thought about opening up a restaurant with a menu that is all healthy fare with a decent atmosphere, place it neat a large spa or a gym in an affluent neighborhood. Leave it open late at night with entertainment and dancing. Bet it would draw a crowd tired of the bar scene.

Don't think it would work in a smaller community like Pensacola, unless, perhaps out on Perdido key or Orange Beach, AL.

Freudian slip, I equated shitty Italian food with Good Greek food.

You'd have to expand beyond healthy fare, those type of restaurants don't last long and cost of food is more. Go for a pizza and gyro joint. lol

If i ever opened a restaurant, I'd have live music. there's no place around her for that. and outdoor seating in the summer. or even in the fall with big heaters.

i'm getting that for dinner before school now. I can't eat much at one time so i'll have half tonight and half tomorrow.

If you marinate the one inch lamb kebobs and you trim them so they isnt fat them the olive oil used in the marinade will drip off as you cook the skewers.
THe tzatziki yogurt sauce is low fat, you can olive oil if you like but waste of calories IMO. Then lightly brush the pitas and grill them in a pan warm and crispy.
Slice some fresh tomatoes and thin sliced purple onions to place with the lamb on the pita bread. Spoon some yogurt sauce on the whole thing.
Stuff is great and easy to make. Just takes some time to prepare the lamb. But you can keep in the fridge then for dinner its like about fifteen minutes to make a few of them easily. Great for dinner parties b/c prep work can be done a head of time with a nice salad.
Add some feta cheese if you like. A nice huge bowl of greek pasta salad with capers and salamis and cheeses is great too for a get together. Add some brocolli, olives and pepperocini peppers to kick up the salad. Cook some penne pasta tender but firm, wait until cool. Throw in a bottle of Newman's italian dressing a whole bottle and the other ingredients. Newman's for some reason is the best Ive tasted for greek pasta salad, coats the pasta and the salamis add flavor, oh and diced peppers as well

Its basically slow food to eat while you drink a bit of your favorite beverage b/c it tastes better as it cools down. Wrap in some tin foil to serve it if people want to drink a bit and keep it warm as they take a few bites as the dinner party progresses.
