I like cutting it into "french fry" sized pieces, brushing them with a touch of olive oil, and sprinkling them with garlic or other seasonings.....then I just bake them. They're quite portable that way and cooking them when they're in smaller pieces is quicker.

This sounds great. I'm going to try that. A quick way to cook them is in the microwave, just wrap the potatoe in a plastic grocery bag and cook it until soft. My mw takes 8min for white ones and 10 or so for sweet.
I buy mine from the local IGA grocery store already wrapped in celephane......dont know the spelling.......and put them in the microwave for 10 minutes, they taste great!
