This is my every Sunday breakfast
1) Wisk two whole eggs & four egg whites in a bowl
2) I add about one cup of skim milk to the bowl
3) Some Oregano, chives, basil and peppercorns. Your preferred amounts
4) Dice up about half a red chili ( I think the are know as peppers)
not the real hot ones but the larger sweeter ones. add to bowl
5) add low fat cheese. I add about 3/4 cup or more
6) Dice up some lean ham. well I use lots. Add it to the pan first along with some sliced mushrooms. Let it start to cook slightly
7) add the mixture from the bowl to the pan. Make sure the pan is not too hot so as to burn the bottom of the omelet.
Now this is the IMPORTANT bit !
When you see the omelet is almost cooked, except for a layer on the top, take the pan off the stove and put the whole thing under a pre heated grill (about med heat) until the top is cooked.
Voila! not dry, not runny, not broken from trying to flip it.
The great thing about an omelet is you can add whatever you like.
