How Do I Make An Omelette

I SHOULD KNOW THIS BY NOW BUT HOW DO I MAKE AN OMELETTE. ALL MY OMELETTES SOMEHOW TURN INTO SCRAMBLED EGGS. WHICH STILL TASTE GOOD BUT I AM CURIOUS.
 
Depends on how many eggs you want to eat but scramble say 3 or 4 eggs in a bowl. Get the frying pan real hot and then pour eggs into pan. Add in whatever you want in your omelette(bacon, cheese, ham, turkey, etc.) and wait until the down side in the pan is cooked and then fold over one half of the omelette in the pan. It should look like a half moon in the pan. Wait until it fully cooks(not runny) and WALLAH.......omelette!
 
Most importantly, use 2 eggs, not 3.

1. break the eggs into a mixing bowl.
2. add 1 tablespoon of milk and 1 of water. (you may make them both water if you like.
3. whip them good. Use a wisk but a drink mixer is best.
4. heat a skillet with a little butter or oil.
5. pour in the whipped egg.
6. don't touch it, except to roll the egg around evenly.
7. wait until a solid layer has formed and then use the spatula to split the solid layer allowing the uncooked egg to seep through to the skillet. When there is just a tiny bit of uncooked egg that is clinging to the upper side of the solid layer, begin sloshing the skillet to loosen the solid layer (may require a spatula).
8. slosh the circle shaped solid layer onto a plate.
9. put whatever you like in your omelet on one side.
10. fold the other side over onto it. The heat will melt the cheese and continue to cook what needs it.

**if you like a double folded omelet, then follow the directions until step 9. Then put your add ons in the middle like a row. Then fold over one side. Then roll the whole thing over like a burrito so that the edges are down.

I WANT TO USE 6 EGG WHITES + 1-2 YOLKS. WILL THAT WORK.
 
This is my every Sunday breakfast


1) Wisk two whole eggs & four egg whites in a bowl

2) I add about one cup of skim milk to the bowl

3) Some Oregano, chives, basil and peppercorns. Your preferred amounts

4) Dice up about half a red chili ( I think the are know as peppers)
not the real hot ones but the larger sweeter ones. add to bowl

5) add low fat cheese. I add about 3/4 cup or more

6) Dice up some lean ham. well I use lots. Add it to the pan first along with some sliced mushrooms. Let it start to cook slightly

7) add the mixture from the bowl to the pan. Make sure the pan is not too hot so as to burn the bottom of the omelet.

Now this is the IMPORTANT bit !

When you see the omelet is almost cooked, except for a layer on the top, take the pan off the stove and put the whole thing under a pre heated grill (about med heat) until the top is cooked.
Voila! not dry, not runny, not broken from trying to flip it.

The great thing about an omelet is you can add whatever you like.
