Help me with my diet please.

6'1", 240, 15% bodyfat.
I want to lose the small pot-belly I have before I begin building again.
In the past I always tried to do both to no avail.
I work construction 10hrs.per day (work my nuts off!) and hit the treadmill for 30min. every morning before work (within my THR), so I'm burning some serious calories. I
I eat carbs and proteins in equal amounts mainly because with a hard, physical job I cannot afford to be sluggish and tired by not eating carbs. I drink at least 1 gallon of water p/day and usually some gatordade during work (about 200 cals worth). For meals and snacks I eat MetRx "big 100" bars (50g carbs/30g protein).
When I get home I eat big-ass salads with light dressing as well as some meat (chicken, fish, steak) and a glass of milk.
I do keep my cals under 2500 per day. Sometimes up to 3000.
I've been cheating on the weekend simply because this is when I lift weights (Sat-pull day / Sun-push day).
I'm losing the gut very slowly. I have noticed some change and can see the outer lines on my abs, but still a little bulge (pro wrestler belly! lol.)
So are there any changes that would help me?
Am I still consuming too many calories?
Should I eliminate cheat days?
Any help is appreciated bros!

For your weight and height and considering your activity level, you may be under consuming calories (resulting in your metabolism slowing down). You might consider bumping cals to maintenence level for a week or two and then lowering them again. Refeeds help too. Also a topical yohimbine solution like lipoderm-y can help target problem areas.
