Help me reach 2k calories while on CKD!

Hey everyone,
I was hoping you all could help me with ideas on how I can get to at least 2000 calories a day, while staying under 20 grams of carbs. I am attempting the CKD diet for the first time, but I am finding it hard to take in a good amount of calories.

Here is what I am eating so far:

Chicken Breasts
Chicken Ceaser Salad
Italian Dressing (has some carbs, so have to use in moderation)
Pepperoini slices
Bacon
Virgin Olive Oil
Natural Peanut Butter (has 7g of carbs per 2 tbsp so cant eat much of this either)
Cheese
Optimum Nutrition Whey (Taking with water, but still has 3 grams of carbs per scoop. Hard to fit this in too :( )



Any more ideas would be much appreciated. I dont eat seafood, and I am trying to keep meals as simple as possible.

well basically if i need to take in large calories in fat, i will reach for my olive oil bottle. I just add abt 4 tbs to my shakes. Thats abt 500cals of good fat. Cant take too much carbs cos i get fat.
 
Drop the PEanut butter, I Can't imagine eating it without Jelly, a Bannana or Bread. What I primarily do is to take a half shot (2 tbsp of EFA Oil, such as Udo's choice) with every meal, which in short is like 240-270 cal/pro/0carb/~24fat/0fiber with every meal, and go about 6 meals a day. If you are also eating other foods with fat, I believe most chicken breasts that I eat have around 6 grams fat per serving, you should be able to make goals.

IF you are getting around 1200 calories from fat (I am), it shouldn't be too hard to get the other 800-1000 from protein.

MY chicken breasts have 120cal/0car/32pro/6fat
and Tuna from the can has around 130cal/0car/~32pro/1.5g fat

Also with whey protein, make sure to subtract Fiber from the calorie allowance.

And don't forget to include both Fiberous low carb veggies or Psyllium Husk Fiber into the diet.

CKDs are great in moderation, I like to run them about 3 weeks at a time then run a few weeks under 150g carbs, but again I am training for Triatholons and just want to get my weight down to a managable spot, the maintain it for a month or two, then repeat the process if I gain any fat back.
 
nuts are good too....have a lot of fat in them.

I just got some cashews with almonds and macadamias...

one serving has like 16gs of fat or something like that.....:p :p

Also can have a dangerous amount of carbs in them if not taken in moderation
 
shakes + olive oil

hamburger patties + cheese slices + mayo (mustard if u like that too)

hot dogs (i found some oscar meyer beef dogs with 15g 5g protein no carbs)

cheeseburgers from mcD's or burgerking (throw the bread away and wipe off the ketchup)

eggs
ranch dressing
tuna + mayo
bacon
lunch meat
steaks
cheeses
grill some fish and eat it with butter/tartar sauce (if u have a george forman grill, try making fish... turns out pretty good)

you just gotta get creative. seasonings and carb free condiments are a godsend on this diet. sometimes iget lazy and just eat some lunch meat and down a couple tbsp of olive oil. tastes like ass, but it tastes better than a mouthful of mayo. (god ihate mayo)

anyone know if HEB or Krogers sells coconut oil or shredded coconut that doesn't have carbs in it? all i could find was sweetened shreaded coconut
