Help!! Im Confused!!

First Off I'm a girl. I'm building some pretty good upper body muscle and currently working on legs to be even. I don't want to gain too much fat and look sloppy but I need calories for muscle. Any Advice!!! Here's my diet:

Breakfast: 1 egg, 4 egg whites, 1/2 cup oatmeal ( coffee w/ splenda)

Snack: Soy protein shake (low carb)

Lunch: 4oz. chicken breast, lettace,4 cherry tomatoes,onion,red pepper and 1/2 cup cottage cheese, unsweetened ice tea

Creatine drink
OFF TO THE GYM

Dinner: Spinach or cauliflower ect. with either chicken or fish ( cod or swordfish sometimes salmon

Protein shake

Whats better 3 sets of ten with weights going up in weight each set or doing 6,8,10,12 of the same weight?????????? I'm 5'6" 140 pounds currently about 23%BF My Goal is to get to the point where I can compete in Bodybuilding. Not figure or fitness. I want to be on the buff side.
