Heat destroying Whey Protein?

Paolo

New member
Every morning i make up 60g oatmeal and 40g whey for my first meal.

I use instant oats for ease and add the whey in with the oats before pouring on boiling water and mixing up.

Ive read previous posts stating that heat will destroy whey protein and render it useless.

Please advise me if what i am doing is not giving me my early morning protein boost.

Thanks

Paul

myth..it doesnt render it useless and it doesnt destroy it...burning does.

the heat changes the 3D molecular structure of the protein...the aminos are still there meaning the protein is still there...it's fine..just slightly altered form...dont worry about it...

If I was you, I would just pour the hot water onto the oatmal, mix it up, let it cool down...then add the whey.

70 degrees will denature protein via the intermolecular forces holding it together, the primary structure will still be there. Assuming the body can hydrolyze a pure primary polypeptide structure, you should be fine.

As stated earlier heat will denature protein which means it will lose its tertiary and or quaternary structure by liberating weak hydrogen bonds. The structure of the protein gives the protein its function (ex. enzymes). When the protein you ingest hits the stomach your stomach releases the enzyme pepsin which in the presence of HCL breaks down protein into peptides. Through further digestion peptides will ultimately break down into usable units (amino acids). In short, the only protein you really need to worry about in regards to denaturing is your own enzymes if you get a super high fever. Oh and if you want to make pineapple jello....use the canned pineapples or the enzymes in the fresh pineapples will not allow the protein in gelatin to set and make jello. Good luck.
