green veggies and fiber

ok i have been eating broccoli for some fiber, also i do not count any cals or carbs from this since most is fiber. i have a quesiton though, does this apply to all veggies or just green, leafy veggies. i love green beans, peas would this be the same, if i ate these are they mostly fiber so i wouldnt need to cound the carbs and cals. what about corn, other veggies?
 
Vegetables like corn and carrots can really screw with your diet if you're watching carbs....much like potatoes, they contain a lot more simple sugars than other vegetables (like brocolli or zucchini for instance).

from what i've read you must count fiber carbs if your low carbing it, if not it won't really matter
 
Peas have a good amount of sugar also. Fiber is not going to make your insulin rise so you are right about not counting that.
 
so corn and peas have sugars in them for carbs, what about green beans? is it only leafy green veggies that have mostly fiber?
 
I just looked up green beans for you. Canned green beans look pretty good. 2 cups has less then 10 grams of carbs. I am running down my carb list looking for stuff as I type this. Carrots look good too they have 5 grams per medium raw carrot. Cucumbers are excellent. Eggplant is pretty good as is Cauliflower. Raw tomatoes are pretty good also Summer Squash like Zuchinni looks good. If you like Radishes you can go to town on them according to my book lol. As far as fruit Strawberries are very good as far as a low sugar fruit with fiber in them. Rasberries are also decent and apricots look good too.
