gluten free diet - help

Hey, My girlfriend may have a gluten sensitivity issue in her diet and is going on 2 weeks with a gluten free diet. Anyone else out there have any good resources or recipes or info in general on this? We're making wheat free pancakes right now. What kind of carb count does rice flour or bean flour have in comparison to wheat?

Calories: 560
Carbs: 125 g
Protein: 10 g
Fat: 2

Bean Flour (per 100 grams)

Calories: 370
Carbs: 63
Protein: 22
Fat: 3
