Fish and "Chips" Anyone?

Looks tasty. Enlighten us Dave! And this fits into ur cutting diet?

Kinda "yes and no". Today I ran 3 miles with an elevation gain of 1600ft in addition to climbing a 220ft tower, so I thought I would reward myself.

The sweet potatoes are low glycemic...better than russets, right?
The asparagus is good anytime.
The Pacific Cod is high in protein. The batter consists of...

1 cup rice flour
2 eggs (in my case Omega 3s)
1/2 cup fat free milk
2 teaspoons kosher salt
1 teaspoon white pepper
1/2 teaspoon cayenne

Mix the batter, dry the Cod, cover in batter and let it stand for ~10 minutes while you bring the pan up to heat w/ Canola Oil.

Add the fish and cook each side for ~ 3 minutes.

I could be more strict in my diet, no doubt, but today...I earned this delicious morsel. :)

Im gonna try this, simple and sounds tasty. have used any other oils other than canola with this?
