Whatever works for you and your proportions. If changing the amount of knee bend doesn't help you get comfortable and maintain form but standing on plates does, I don't see any downsides to it.
For whatever reason, I've always found rows the easiest of the main exercises on which to keep good form. It probably helps that I started out doing them dynamically and from the floor, so I didn't have any bad "half-row, half-shrug" habits to break.
