Cooked egg whites... how long will they keep for?

Okay, now that I am back at uni I am often forced to eat on the go. As a result, I often resort to drinking egg whites as my protein source.

Say I cooked some egg whites with brown rice, and then kept it in the fridge overnight to eat the next day... Would it still be alright? Bear in mind it will spend about 2 and a half hours in my bag before I eat it. What about cooking for two days in advance?

Thoughts?

I think they will be OK. Do you have a Microwave in your Uni? If so, take them frozen and blast them there.

If not, give it a try with a small batch (but keep a protein bar just in case). If you don't leave them under the Sun they should be OK, but cold which makes rice and egss a little nasty...

have you tried those famous Oatmeal pancakes thingies?

Yes, there is a microwave at uni but most of the time I will be eating while I am walking between classes, so won't have enough time to use it. However, on the days I can use it, I will do.

Is it okay to refreeze defrosted eggwhites? Say, I defrost the carton in the fridge, then pour out the amount I need and freeze that. Do you think that will be alright? Lol, I aint no expert on bacteria and how it forms on food...

Oatmeal pancakes?? I sometimes make my own pancakes for breakfast with oatmeal, eggwhites, cinnamon, stevia, vanilla extract and mashed banana... then I top it with SF syrups. :P
 
Drinking uncooked eggwhite is ASKING for gastrointestinal problems... BEGGING FOR THEM...


Raw albumin binds to all sorts of stuff you need and tosses it down the shitter. A half dozen vitamins and at least two beneficial bacteria are going bye bye everty time you do that. Its not gonna kill ya tomorrow, but it isnt all that good an idea either.

Drinking egg whites = :worried:

As for cooking them ahead of time, they won't go bad overnight or even 2 days later..... You may want to just slightly undercook them so when reheating them, they won't turn rubbery on you...
 
Okay, I won't drink them raw anymore. However, I checked out the uni microwave today, and, to be honest, I'd rather eat food at room temp than use that thing.

So, I'll cook the egg whites with the rice and spices a day or two before, then keep them in the fridge until the morning I leave for uni.

They'll be in my bag for about 2 and a half hours before eating them... Surely no bacteria could form in this time??

Can you buy a small insulated cooler?? You know, the small-ish ones?? You can keep them in there with an ice pack....

As for the bacteria -- bacteria forms constantly under most conditions, but it won't have multiplied at a level that would hurt you in 2 hours.... so, I think you'll be OK...

Oh, and the uni microwave = :worried:
 
That Uni Microwave sure sound like a nasty thang...

you sure you didn't open a Petri dish instead???
 
I eat shit that is left out often actually... I'm sure it's not a great idea... but I've been fine so far...
 
LMAO, words cannot describe how grotesque the inside of the uni microwave is (I'm sure you all have a picture forming in your minds). :evil: :worried:

An insulated cooler? Good idea, I think I have one. Hope it fits into my lap-top bag.

One FINAL question on cooking egg-whites:
- Obviously the microwave would be the quickest way to cook them (the one at home, not the one at uni. LOL), so which of the following do you think would the the safest and most efficient way?

1) Cooking them in the microwaving as I am about to leave for uni, then packing them and eating them 2 hours later (I will not have time to put them into the fridge, I will just cook then pack, so they will still probably still be warm when I eat them).

OR

2) Cooking them in the microwave the day before, then refrigerating them overnight and packing them at the temp they would be from spending time in the fridge, possibly with an insulated cooler if I can find one?

And which option would be better if I can't find a cooler?

Safety wise, I don't either either option 1 or 2 will matter...... Now if you left them on the front seat of your car in 100 degree F weather, thennnnn :worried:
