Comment/question about St Patrick's day

Just a quick note. I’m curious: why do so many people who weren’t born in Ireland/ don’t live in Ireland say that they are Irish? I assume that it’s a heritage thing, but I find it a little unusual. It’s not something that really happens for other countries – I’ve never heard of (eg) the US celebrating St George’s/St Andrew’s day in a big way, yet I’m sure many citizens will have English/Scottish roots. Is there equivalent celebrations for those with Spanish (etc) ancestry?
